Keto-Friendly Breakfast Sea Moss Egg Muffins Recipe

Start your day with our Keto-Friendly Sea Moss Egg Muffins! These muffins are a delicious and healthy way to incorporate the nutrient-dense sea moss gel into your keto diet. Each muffin contains approximately 1 daily serving of sea moss gel, offering you a powerful dose of vitamins, minerals, and antioxidants. They're easy to make, you don't taste the sea moss and you can store them in the fridge or freezer for a quick grab-and-go nutrient-dense breakfast throughout the week.

Ingredients

- 10 large eggs (or egg substitute for a vegan-friendly version)
- 1 teaspoon salt
- 1 teaspoon pepper (if desired)
- 1/2 cup tomatoes, chopped
- 1/4 cup green onions, chopped
- 1/3 cup (approximately 336 grams) of sea moss gel
- Other toppings as desired (e.g., spinach, kale, cheese, ham, cooked bacon, sausages, etc.)

Instructions

1. Preheat your oven to 375° F. Line a 12-count muffin pan with silicone liners or coat it with non-stick cooking spray.


2. In a large bowl, crack the eggs, add sea moss, add the salt and pepper, and whisk together.


3. Pour the egg mixture into each muffin well, filling them halfway. Then, add your desired additional ingredients.


5. If there's any egg mixture left, pour it on top of the ingredients, but do not fill more than 3/4 full.


6. Bake for 15 minutes or until the muffins are set (no jiggle when touched).


7. Let them cool for a few minutes before removing from the muffin tin.

Storing, Freezing, and Serving

These muffins can be stored in the refrigerator for 5-7 days. To reheat, just pop them in the microwave for 15-20 seconds.

If you want to freeze the muffins, let them cool completely before transferring them to a freezer-safe container or bag. You can store them in the freezer for up to 3 months. To reheat, microwave for 30-60 seconds, or until heated through.

Whether served fresh or reheated from the fridge or freezer, these muffins make for a quick, healthy breakfast or a high-protein snack on-the-go!
